Here are instructions on how to make a healthy chicken stew.
Here are the ingredients:
Chicken Stew
skinless chicken (4 pieces to cut up if making it for 4 people).
1 chicken stock
1 tin of chopped tomatoes
chopped carrots
chopped onions
chopped mushrooms
chopped celery
1 garlic chopped
frozen mixed vegetables can be used or just peas or broccoli. You can also cucumbers/marrow if you wish.
Cooking Method
1. First, boil some water in a big pot. One chicken stock is allowed, but you don't really need it.
2. Chop skinless chickens. Put into the boiling pot of water. Leave to boil for 15 minutes.
3. After the chicken has been boiling for 15 minutes, then add chopped onions, carrots, mushrooms, 1 chopped up garlic and stir in (or cucumbers). Leave to simmer with the lid on for a further 20 minutes.
4. After the 20 minutes, add the tin of chopped tomatoes and frozen vegetables. Stir the stew and leave to simmer with the lid on for approximately 15 more minutes.
5. Add for taste, salt, and pepper whilst simmering and serve after approximately 10 minutes.
6. The chicken stew takes about an hour in total or if preferred it can be left on for a further 20 minutes, but no longer than this. Then it will be ready to serve and enjoy. You can eat it with brown rice but no potatoes.
Tips
Make sure you do not leave boiling for longer than 1 hour 20 minutes as the vegetables will be too soft. Also, you may have brown rice with this meal plan.
